Peppermint, a species of the mint family, tastes herbal and refreshing. In the Middle East peppermint is used with beans, grains and tabouleh. In Asia, peppermint is used in spring rolls and soups.
Add 1 teaspoon mint to 1 cup dried beans or rice.
Peppermint is thought to aid in digestion and could be used as a diuretic.
