This Organic Mayan Pepper Chai Dark Chocolate infuses the robust spiciness of our masala chai and the subtle heat of crushed Mayan peppers, with our 60% cacao dark chocolate. When allowed to melt in your mouth, the richly bittersweet taste of the cocoa is first noticed; quickly this becomes deliciously backed by a well-balanced symphony of flavors lent by the various spices. The exotic notes of these spices comes from our handcrafted blend of masala chai, which incorporates the spicy-sweetness of ground cinnamon and ginger, the mellow smoke-like aromatic qualities of crushed cardamom pods, and the delicate bite of black peppercorns – topped off with the subtle fieriness of Mayan peppers. The resulting creation is a truly novel chocolate experience with an impeccable boldness that refuses to be overpowering.

Handcrafted by our master chocolatier using only the finest organic cocoa beans, our chocolates strive to exceed the highest expectations in both quality and taste. We believe that the genuine flavor of the cocoa is what’s important, so we keep our ingredients simple: a rich blend of unsweetened chocolate and cocoa fat, a touch of sweetness from pure organic cane sugar, and—in the case of our milk chocolates—whole milk to create a silky mouth feel. These simple ingredients are then delicately infused with our own spices and herbs to create a uniquely irresistible taste. The resulting melt-in-your-mouth creations boast the perfect gourmet texture, a rich taste of cocoa, and a variety of complex flavor profiles that promise to satisfy both dedicated connoisseurs and periodic indulgers.

Chocolate, as we know it, is derived from the fatty seeds of the cocoa tree, native to Central and South America. Traditionally made into a bitter drink and celebrated by the Aztecs for its rich taste and medicinal properties, these seeds have played a role in Latin American cultures for thousands of years—with its name literally translating to “food of the gods”. Around 1500AD, European explorers began transporting cocoa beans back to Europe, where they soon took hold amongst the upper class. Over the years, the supplies and popularity of this divine fruit continued to increase, allowing it to spread its powerfully-delicious reach to almost every corner of the world.

The many health benefits that have now become associated with cocoa are due to its abundant load of minerals, vitamins, and antioxidants—with studies linking moderate cocoa consumption to a variety of benefits, ranging from increasing cardiovascular health to helping control blood pressure.

The rich mouth feel of this chocolate is the result of its high percentage of our dark cocoa, which at 60%, has bitter notes that tend to trump the mellow sweetness. This creates a bar that tends to be best complimented by sweets -with traditional examples being- dried fruits, sweetened coffee, or an after dinner wine such as port or sherry. However, thanks to the chai blend infused into this bar, it is also capable of performing intense flavor wizardry with a number of unique desserts, symbiotically boosting the natural flavors of the dish with its bold trio of spices. For example, try delicately melting and drizzling over unflavored cheesecake, or shaving over the top of a fresh baked pumpkin pie. Of course if you really want to extenuate the ridiculous-deliciousness of this bar, I mean, if you really want to create a taste-bud tantalizing experience that defines chocolaty greatness… you can’t go wrong with the time honored method of smashing a slab of the bar with a melted ‘mallow between two graham crackers.
