This Organic Jasmine Dark Chocolate is a fusion of bold flavors, bringing together the richness of our 60% cocoa with the floral sweet notes of jasmine green tea. The resulting flavor profile fills your mouth with the robust taste you’d expected from a well-crafted dark chocolate, while simultaneously tantalizing your senses with the floral sweetness that is reminiscent to a long-steeped cup of herbal tea. The ability of this chocolate to attain such fixating aromatic qualities is thanks to the use of the pristine jasmine blossom. Centuries ago the Chinese found that if hand picked during their limited peak season, these flowers could be dried and combine with green tea leaves, imparting their delicate aroma, and creating a beautifully flavorful cup of tea. Since the powerful fragrance and flavors of the jasmine blossom has made this blend the most popular scented tea in East Asia, we decided to experiment and see if the same properties could be used to accentuate the taste of our dark chocolate. The good news? –it did! The bad new? –It's not socially acceptable to smash the entire box in one sitting.

Chocolate, as we know it, is derived from the fatty seeds of the cocoa tree, native to Central and South America. Traditionally made into a bitter drink and celebrated by the Aztecs for its rich taste and medicinal properties, these seeds have played a role in Latin American cultures for thousands of years—with its name literally translating to “food of the gods”. Around 1500AD, European explorers began transporting cocoa beans back to Europe, where they soon took hold amongst the upper class. Over the years, the supplies and popularity of this divine fruit continued to increase, allowing it to spread its powerfully-delicious reach to almost every corner of the world.
The many health benefits that have now become associated with cocoa are due to its abundant load of minerals, vitamins, and antioxidants—with studies linking moderate cocoa consumption to a variety of benefits, ranging from increasing cardiovascular health to helping control blood pressure.
When deciding what foods to partake in while feasting on this exquisite chocolate, it’s important to keep in mind the bar’s primary dominating flavors: floral-sweet and delicate-bitterness. The bitterness comes from the 60% cocoa content, and grants the bar an intense mouth feel that is cut well with a glass of chilled whole milk, or perhaps some dried figs and prunes. The floral-sweet notes hit the taste buds a bit after the bitterness, but quickly fixate the senses, creating an herbal experience that is beautifully accentuated with the non-dominating flavors of sugar cookies.
