This Organic Chili Cayenne Dark Chocolate blends the bitter sweetness of our 60% cacao with a fiery duo of both chili and cayenne peppers –creating the ultimate chocolate experience for those who like to walk on the spicy side. This combination of sweet and heat may seem a bit odd, but in actuality it’s one of the most “traditionally” flavored bars that we feature. That’s right, historical consumption of cacao in Latin America was generally in a powdered form, enjoyed as a savory-bitter hot beverage that was blended with crushed peppers. As such, we like to consider this bar a true “fusion” chocolate, featuring the age-old spicy-hot flavors, balanced out by the modern touch of sweetness and hint of vanilla –resulting in a truly mouth and eye watering chocolate experience that is not for the faint of heart!

We believe that the genuine flavor of the cocoa is what’s important, so we keep our ingredients simple: a rich blend of unsweetened chocolate and cocoa fat, a touch of sweetness from pure organic cane sugar, and—in the case of our milk chocolates—whole milk to create a silky mouth feel. These simple ingredients are then delicately infused with our own spices and herbs to create a uniquely irresistible taste. The resulting melt-in-your-mouth creations boast the perfect gourmet texture, a rich taste of cocoa, and a variety of complex flavor profiles that promise to satisfy both dedicated connoisseurs and periodic indulgers.
Chocolate, as we know it, is derived from the fatty seeds of the cocoa tree, native to Central and South America. Traditionally made into a bitter drink and celebrated by the Aztecs for its rich taste and medicinal properties, these seeds have played a role in Latin American cultures for thousands of years—with its name literally translating to “food of the gods”. Around 1500AD, European explorers began transporting cocoa beans back to Europe, where they soon took hold amongst the upper class. Over the years, the supplies and popularity of this divine fruit continued to increase, allowing it to spread its powerfully-delicious reach to almost every corner of the world.
The many health benefits that have now become associated with cocoa are due to its abundant load of minerals, vitamins, and antioxidants—with studies linking moderate cocoa consumption to a variety of benefits, ranging from increasing cardiovascular health to helping control blood pressure.
When pairing this bar there is only one aspect of the flavor profile that you have to know… spicy. The blend of both cayenne and chili peppers, though slightly balanced out by vanilla and sugarcane, play off of the 60% cocoa’s bitter notes and truly dominate the flavor profile of the bar. This creates a unique chocolate pairing situation, but not unmanageable. The most obvious choice is lightly-sweetened dairy products that can cool off the heat while accentuating the more delicate spicy notes –such as sour cream, yogurt, plain cheesecake, or even vanilla ice cream. Playing with non-hot spicy foods and drinks, such as those heavy with cinnamon and ginger, can also accentuate the bars peppery notes in a desirable way. When it comes to booze pairings, take a tip from the Mexican cuisine and opt for lager style beers –others that are to sweet or dark will overpower and off-mix with the fiery flavors. Another option is fruity semi-sweet white wines, which can balance out the heat –avoid dry reds as their complex layers clash with the spicy notes. Truth be told, this particular bar’s novel flavor profile has enough going on to keep your taste buts busy all on it’s own –but that doesn’t mean featuring it in a spicy-hot S’more isn’t an awesome idea!
