Our Organic Whole Decorticated Cardamom Pods differ from standard cardamom pods in that they have had their outer shell removed, leaving only the inner seed. This inner seed is what is ground into a powder, rendering a the globally loved spice--that has found it's way into a range of cuisines. The popularity of the spice comes from it's uniquely complex flavor profile that features grapefruit-like citrus notes, backed by a nostril-widening fragrance, with a less-sharp ginger-like spiciness. The spice's sophisticated flavors, and ability to deliciously enhance both savory and sweet dishes have created a global demand, making it one of the most expensive spices on the market today.

The cardamom plant is native to India, Bangladesh, Bhutan, Indonesia, Pakistan and Nepal, however Guatemala is the largest producer of commercial cardamom today, followed by India. A German coffee planter, who had taken a liking to the pods unique culinary attributes, introduced cardamom to Central America just before WWI. Demand for the spice has been steadily increasing since the 1800’s, with greater demand coming from China.

Cardamom is widely used in traditional medicines. It can be used to treat sores in the mouth, the teeth and gums as well as soreness of the throat. It has been used in traditional Chinese medicine to treat stomach issues, digestive issues, dysentery and constipation. It is believed to be useful for breaking up kidney and gall bladder stones as well.

Using at Home
These all-natural cardamom pods have had their outer shell removed, allowing for the inner seeds to be easily ground into the flavorful and fragrant ready-to-use spice. The benefit of this, is that by keeping the seed intact until just prior to use, the potency of the spice is preserved. To take advantage of this, simply use a spice grinder to pulverize the seeds, just prior to use in your favorite sweet or savory recipes. Try adding a pinch into your next baked good to infuse with a delightfully spicy sweetness, or add some into your next pot off coffee or tea. The zesty notes, and mild spiciness also contribute beautifully to meat rubs and braises, or as a simply way to spice up a pot of quinoa or rice!
