Gunpowder tea, also called imperial pinhead, is a Chinese green tea from the Zhejiang Province. The tea leaves are picked, withered, steamed, rolled, and then dried. The rolling process allows the leaves to store and travel with less damage and retain flavor. Gunpowder tea has a hearty but sweet flavor and can be re-steeped throughout the day. Steep three to four minutes at 175 to 185 degrees.
