This Organic Cinnamon Sichuan Dark Chocolate features our 60% cacao dark chocolate deliciously infused with ground cinnamon and crushed Sichuan peppers. The sophisticated flavor of this blend comes from the unique peppers, which instead of having the typical pungently hot taste, boast a mild citrus flavor of zesty lemon-lime. Perhaps most famously, however, is the peppers ability to create a subtle tingling numbness in the mouth. This effect beautifully opens the palate up to the spicy-sweet flavors of the cinnamon and the beautiful bitterness of our premium dark cocoa. The indulgent flavor profile is melded seamlessly with our organic vanilla extract, and finished off with the perfect touch of sugar cane sweetness to enhance, without covering up, the rich flavors.

Chocolate, as we know it, is derived from the fatty seeds of the cocoa tree, native to Central and South America. Traditionally made into a bitter drink and celebrated by the Aztecs for its rich taste and medicinal properties, these seeds have played a role in Latin American cultures for thousands of years—with its name literally translating to “food of the gods”. Around 1500AD, European explorers began transporting cocoa beans back to Europe, where they soon took hold amongst the upper class. Over the years, the supplies and popularity of this divine fruit continued to increase, allowing it to spread its powerfully-delicious reach to almost every corner of the world.
The many health benefits that have now become associated with cocoa are due to its abundant load of minerals, vitamins, and antioxidants—with studies linking moderate cocoa consumption to a variety of benefits, ranging from increasing cardiovascular health to helping control blood pressure.
This bar’s flavor profile sings with bright notes of zesty, spicy, bitter, and sweet… allowing the pairing to go in a variety of directions. Some easy compliments are the salty sweetness of honey roasted nuts, or chunky peanut butter which accentuate the cinnamons natural spicy notes, and play deliciously with the dark coco’s bitterness. The citrus-like zest and mellow numbing effects lent to the bar by the Sichuan peppers can actual reverse the role of the chocolate in the pairing process, allowing it to become the ingredient that enhances instead of dominates. For example, try pairing with your favorite fruit pie, allowing the bar to take the back seat, acting as a primer for the palate, opening it up to the dominating flavors of the fruit.
