Turmeric Coconut Quinoa with Broccoli Thursday, March 13 2014

 

This savory and slightly sweet dish literally takes minutes to put together and tastes so delicious.

 

It is naturally gluten free and vegan and features some of our favorite superfoods, including turmeric, ginger, coconut, quinoa and broccoli.

 

Pair it with grilled fish or chicken or enjoy as a vegan main course.

 

Turmeric Coconut Quinoa with Broccoli

Serves 4

 

4 cups cooked quinoa

3 cups organic broccoli

1 teaspoon virgin coconut oil

3 tablespoons water

1/2 teaspoon organic turmeric

1 teaspoon organic garlic granulates

1/2 teaspoon organic ground ginger

1/4 cup full-fat canned coconut milk

dash of organic cayenne

dash of salt

 

Directions:

In a medium pan, melt the coconut oil over medium heat. Once the pan is hot, add the broccoli, water and a dash of salt. Cover and cook for 3-4 minutes to steam the broccoli. Remove the lid and add the spices and coconut milk. Stir well to combine and let simmer about 3 more minutes, until fragrant.
